My favorite breakfast

Yesterday morning I realized that we had some leftover chorizo from the beans we made Sunday, so I decided to quickly cook it up for my favorite breakfast ever. That’s right… I know this is going to sound crazy, but I like chorizo tacos better than bacon and eggs.

And now I’m mortified that you know my dirty little secret. Bacon is King, but these are pretty damn good. And, whatevs. Chorizo is still pork, so I’m not totally crazy.

First I chopped up half an onion. Cooked it for a couple of minutes. Then added half a pound of chorizo. Cooked it for a couple of minutes. Then I added 4-5 beaten eggs. A couple of them had double yolks, so I can’t remember how many I actually added. Heat up some tortillas on the griddle and serve with cheese, salsa and if you’re lucky bloody marys, or micheladas. (We had neither, as it was just a Tuesday morning breakfast and Sean frowns on me serving cocktails before noon on weekdays. Unless we’re really hungover, but that’s a whole different can of worms.)

That last picture looks sorta gross (why do my finished product pictures always look disgusting?), but it was awesome. I wish we could eat this way every day.

This dish takes less than ten minutes to prepare, and is so satisfying, it’s worth the effort. Now if I can only get some damn beers with it next time.
